Montgomery's uses raw milk, and a traditional pint starter rather than powdered cheese culture, and this wheel has been selected by the great champion of British territorial cheeses, Neal's Yard Dairy.
This wheel shows some bluing through one seam, which is considered desirable and is not a fault.
